Tasty and tangy salmon skewers. I’ll tell you now, this recipe is super simple.
It should also be mentioned that this recipe is actually in many respects healthy, it’s high in protein and low in carb, so make as much as you want and enjoy every fall-off-the-skewer bite.
All you’ll need is:
Salmon ( I used about 1 pound)
1/4 cup unsweetened apricot jam
1/4 teaspoon Stevia (you can also opt for other sugar subs or natural sugar)
1/4 teaspoon paprika
1/2 teaspoon tabasco sauce
Juice of one orange (if you like just use a splash of orange juice)
Mix all ingredients together, then add in your salmon.
Let this sit for at least 20 minutes, but no more than 45 before skewering your lovely little salmon strips.
Place on parchment paper and place in the oven for 9 minutes at 405F (207C).
Remove from the oven after nine minutes – let cool for just a second – and serve it up.
These little guys are a guaranteed hit at any lunch or dinner.
I cannot emphasise enough how dang tasty these are!
I served mine up with a side of simple green asparagus.
