If you like sweet potatoes then you will LOVE these! I was sceptical at first that something honestly so healthy could ever attempt to mimic the taste of the original thing – but I was mistaken – the taste and texture are just like a real sweet potato fry !

In a bowl mix olive oil with salt and pepper to your liking. Take your carrots by the handfull and evenly toss them around in the bowl – making sure to coat each one.
Once your carrots are coated place them on your baking tray – I lined mine with baking paper to avoid extra mess
Bake ! Bake for ten minutes then remove tray and flip each carrot fry over, put back in over and bake for another eight minutes to ten minutes depending on how thick your slices are.
Remove and enjoy ! Serve these bad boys up right away! You can pair with your favorite fry condiments if you so choose but I enjoyed them just as they were.
